Cucumber Rolls


Ingredients

Cucumber 1
Peeler
Cutting board
Knife

For filling

Yogurt or dhai (it has to be thick)
Sun dried tomato 5
Bell pepper (red or yellow) 1/2
Jalapenos or green olives 5
Cucumber 1/2
Apple 1 small piece
Tomato (without the seeds) 1/2
Oregano 1tsp
Black Pepper 1/2 tsp
Chillie Flakes a tinch
Lemon few drops
Salt as per taste

 1. Cut the sun dried really fine (to cut with a knife was tough as you need to cut it really fine hence i used a kitchen scissor)
2. Then chop the bell pepper , i used yellow here. Then fine chop the cucumber (without the seeds as this well leave water, then the apple and jalapenos or olive and tomato. Cut into small cube shapes.
3. Please ensure you cut all of them really fine as cucumber roll is very delicate
4. Mix all the cuts vegs and olives along with the yogurt
5. Add oregano, black pepper, lemon and chillie flakes and mix well
6. Now place the cucumber on the cutting board and use a peeler or knife and cut long slices
7. Now place the mixture at one end and roll it
8. Once you rolled it pierce a tooth pick to hold it

Simple right :-) I am sure you will enjoy this snack.




Tips
If using dahi its has to be tick if not the water will ooze out from the roll and get soggy.
