Papaya soup

Papaya soup :-) Never heard of this. We have had only papaya as a fruit. Now can we have it as a soup. It is sweet how can we have it. All these questions pop up on our mind. But believe me this soup is not sweet infact it tastes nice. Even i had the same questions on my mind as you do. I thoroughly enjoyed having it. Here is the recipe for it.

Ingredients

Papaya 1/2
Carrot 1
Garlic 2-3
Onion 1/2
Ginger a small piece
Olive oil 1tsp
water 1/2 cup
Chilli falkes, black pepper and oregano ( for garnish)
Lime 3-4 drops
Method

1. Crush the ginger and garlic keep aside (as you see in the above picture)
2. Peel and cut the carrots and papaya into small cube shapes.
3. Slit the onion
4. In a pan add oil and keep the flame low, once warm add onion and stir well. Let the color change to pink then add the garlic and ginger. Dont let the color change to brown Mix for 2 mins
5. Now you would add carrot and mix again for 2 mins



6. Finally add water and cover for 15-20 mins on a low flame, after done just check if the carrot is cooked, you can add pinch of salt and mix and turn off the flame
7. Then cool it and put it a blender
8.  Now add the cut papaya in the same pan and cook on a low flame for 2-3 mins
9. Once cooled add the papaya also in the blender. If you find it too thick you can add water as per you consistency required. ( i did not add more than 2 tbsp as i wanted my soup be thick. when it is thick is really filling)
10. Transfer to a bowl and add salt, black pepper, chilli flakes and oregano as per your taste. Squeeze lime too.

I have garnished with mint leaves and lime.
