Here is a zero carb dish that i made this Saturday. Tasty bhi healthy bhi.
Ingredients
For the noodles
Zucchini 1
Peeler
Olive oil 1 1/2 tbsp
Oregano 1/2 tsp
Chilli flakes 1/2 tsp
Salt
Egg plant
Egg plant 1/2 ( i took half of a big egg plant, if you are using small ones take two of them)
Olive oil 1 tbsp
Onion 1 medium
Garlic 3-4
Chilli flakes 1 tsp
Black pepper 1/2 tsp
Basil leaves 8 -10 leaves
Parsley 1/2 tsp or fresh 3/4 cup
Water 1/4 cup
Beans 1/2 cup (cooked) ( i did not have beans and i used sweet corn)
Bread crumbs 1/2 cup
Marinara sauce
olive oil 1 tsp
Garlic 7-8 ( i like to have a nice garlic taste, if you want you add less)
Tomato 2 large
Oregano 1tsp
Chilli flakes 1tsp
Basil leaves 5-8
salt and pepper
Method -- Egg Plant
1. Place 1 tbsp oil in a pan over medium heat.
2. Once the oil is heated add the egg plant and mix well for 2-3 mins
3. Then add 1/4 cup of water
4. Add the salt ,red chilli flakes, oregano and pepper
5. Once its tender transfer to a blender or food processor
6. Add the remaining oil and garlic and onion and cook for 3-5 mins
7. Add these too in the blender or processor along with the beans, basil leaves and parsley
8. Dont not blend to a puree
9. Combine well and make small balls
10. Now roll the small balls over the bread crumbs
11. Once its ready you can shallow fry the meat balls or bake in oven at 180 for 20 - 30 mins
Method - Marinara sauce
1. Firstly i crush the garlic and keep aside. Also chop the basil leaves really fine. Leave a aside two leaves to garnish
2. Grind the tomatoes in a blender to a puree
3. In a pan add oil once its heated add the garlic and saute well, ensure you don't burn it
4. Then add the tomato puree, basil leaves oregano, chilli flakes, salt and pepper
5. On a low flame let it cook for 15-20 mins
Method - Zucchini noodles
This is the challenging part. Here you need to have loads of patience. This would take some time. But don't worry i am with you :-)
1. Wash the zucchini and cut both the edges.
2. Dont remove the skin
3. Now by using a peeler, you need to cut to long thin strips, at the end there would be some pieces remaining you need to chop them really fine like the long thin strips.
4. Now keep this aside
5. In a pan add oil, once heated turn off the flame then add oregano and chilli flakes. I don this because i don't want the chilli flakes and oregano to burn. Now mix both well
6. Then switch on the flame and add the zucchini. You need to toss them well
7. Now add salt.
8. Cook on slow for 5-7 mins. Normally what i do see i keep it on high flame for 2-3 mins and then again on low flame for 2 mins
9. Your noodles is done
The final step
1. Place the noodles on a plate
2. Then place the egg plant balls
3. Finally pour the sauce over the egg plant as much as you want
4. Garnish with basil leaves
